I'm very busy these days, so it's only a very fast deviation.
Following the tendency by his father and his uncle Harry, that adopted oysters in reference to their mother's family coat of arms. Then the concept is to make the differentiation label the more similar to his mother's family coat of arms (as impaling or quartering the royal coat of arms requires a royal warrant), that's coincidently very adequate to it.
Blue labels are common in both English and Scottish traditions (as used by current Duke of Lancaster's and Duke of Rothesay's arms, respectively), and the then-reigning House of Hannover used some red labels about a century ago. A party-per-pale label is novel, as far as I know, but it's royal family heraldry, there's no rules!
